BFF Weekend!

This past weekend, my best friend since 7th grade, Erica, came up to visit! I was so excited! It also worked out perfectly since Robbie was closing on Saturday night aka getting home at 1am UGH! She hadn't been up to visit since William was first born, so we had lots to talk about ;) We had sooo much fun and hopefully William didn't scare her into not having kids! Ha!

When she first got here, William  was napping. We woke him up soon though and he opened his Valentine's present from Auntie Erica! She got him a precious stuffed dog, some wipes ;), and a CUTE whale for the bathtub that buzzes all around and sprays water.

 After that, we went to lunch at Firehouse Subs and Robbie went to work. Erica and I ran some quick errands to Kohl's and Target (since mama forgot bottles and formula, shame, shame!) Nana graciously watched William so we could go quickly and not get William out in the rain! Then, we all packed up and went to Belk's for some shopping and then dinner at Outback. When we got home, Erica took a turn at feeding William and then he went night night!! He was supposed to have a bath to test out his new whale, but it was sooo late because I had to get Super Bowl groceries (which was so funny because Erica sat in the car with William and he laughed and then cried and freaked her out haha!), so we decided to give him one in the morning.

 After he was in bed, Erica and I just hung out and I begged her to help me make key lime fudge for the Super Bowl (found on Pinterest, of course!)

What you need:
  • 1/4 cup sugar
  • 1 1/4 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 16 oz high quality white chocolate, finely chopped
  • 14 oz can sweetened condensed milk
  • 1 Tbsp butter
  • zest of one lime
  • 3 Tbsp key lime or lime juice (I would recommend using a little more lime juice, ours wasn't as limey as I thought it would be)
 Instructions
1. Preheat oven to 375.
2. Line a 9 x 9 inch pan with aluminum foil and grease with butter. Set aside.
3. In a bowl, combine the sugar and graham crackers crumbs and stir to combine.
4. Add the melted butter and stir until crumbs are all moistened.
5. Spread evenly into the baking pan and press until even. Bake at 375 degrees for 4 to 5 minutes or until edge is lightly browned.
6. Remove from the oven and let cool on a wire rack.

7. Once crust has cooled, add the white chocolate, sweetened condensed milk, and 1 Tbsp butter to a saucepan.
8. Cook on low heat just until chocolate is melted and and mixture is smooth. Remove from heat and stir in the zest and juice.
9. Spread mixture evenly over the crust. Cover and refrigerate for 12 hours.

10. Remove fudge from the pan using the foil and cut into pieces.
11. Lift the fudge from pan using edges of foil. Use a damp kitchen towel to clean off the knife after each cut for a clean cut.

 Sunday morning, we gave William his first bath in the big bathtub. Whew, it was a workout! Robbie eventually had to get in there and help me hold him because he was so slippery!!! But the whale was a big hit! He followed it all around the tub and and kept reaching out for it.

  1. Awww my very own post!!!! Love it!!! I had sooooo much fun! Can not wait to come back up! He didn't scare me too bad, little boy knew what he was doing when we were in the car while you were in the store. I laugh about it now still! Love you guys!!!
