Super Bowl XLVI


For the past few years, Robbie and I have hosted a Super Bowl party at our house or apartment, wherever we are! We had a little panic right before that Robbie wasn't going to get Sunday off, so we were going to DVR it and have our party Monday night, so Robbie could be there! Luckily, he ended up getting the day off. This year, we hosted Mama, Stephanie, her dad, Hannah, Ashley, Willie, Molly, and Tanya. We missed Lara Lee this year because she has been at every other one!

We just have a good time sitting around talking and eating. The only person who really pays any attention to football is Robbie ;) Bless his heart, he is riding solo on that. I think I glanced at the game maybe once. William was really fussy when everyone first got there, so we put him down for a quick nap and he fell asleep as soon as he hit the crib! After that, he was in a much better mood and had a good time playing and watching the game!

Erica and I ran out the day before to find William a football shirt!!! He couldn't watch his first Super Bowl without a football shirt! DUH!

We had SO much food! It was insane!!! Ashley brought pigs in a blanket, pizza rolls, buffalo chicken dip and corn dip!!! It was all so delicious! I made the key lime fudge, chicken wings, ham sammies, and spinach dip! Stephanie brought cupcakes from the best place in Raleigh, The Cupcake Shoppe

 Now for the recipes:

For my chicken wings, I actually use my mother in law's recipe. Put seasoning salt on all the wings, put them in a 450 degree oven for 30 minutes. At this point, turn them over and season the other side and put back in the oven for 30 more minutes. Once they are done, put them in a bowl and pour a little Texas Pete in, and some Moore's Buffalo Sauce (enough to coat) and mix it around. Easy!

Spinach and Artichoke Dip (another recipe from Pinterest!) http://www.budgetsavvydiva.com/2012/01/copycat-applebees-artichoke-spinach-dip/


What you need:
(10 ounce) box or bag frozen chopped spinach
14 ounces artichoke hearts , drained and roughly chopped
1  cup shredded parmesan-romano cheese mix
1 cup shredded mozzarella cheese
10 ounces alfredo sauce – I just buy the canned stuff ;)
1 teaspoon finely minced garlic
4 ounces softened cream cheese
1 tsp pepper


Directions:
-Preheat the oven to 350.
-Mix all the cheeses together in a bowl (1/2 of the mozz cheese, cream cheese, parmesan-romano and alfredo sauce.
-Place spinach, artichokes (I put very few artichokes because they aren't our fave), pepper and garlic in the bowl and mix.
-Put in a casserole dish and sprinkle the rest of the mozzarella cheese on top.
-Bake for about 30 minutes, until the top turns brown.
Finished product - it was a big hit, even Robbie liked it!
Ham Sammies 

What you Need:
1 pkg 24 party rolls (or I used 2 pkgs of 12 dinner rolls)
1/2 stick butter, melted (next time I may use more butter)
4 tablespoons poppy seeds (definitely less poppy seeds next time!)
4 tablespoons mustard
4 tablespoons Worcestershire sauce
Sliced ham
Swiss cheese



-In a bowl - mix together the butter, poppy seeds, mustard and Worcestershire sauce.


-Spread sauce on both sides of rolls and put a piece of ham and cheese on each
-Cover and bake at 350 for 15-20 minutes or until cheese melts. Best if served warm!!!!

 We had such a good time with everyone!!! Can't wait til next year!

In my defense, it had been a long time since I had wine, ok?! LOL!
